Coconut Pizelle

Ingredients:

  • 2 eggs, lightly beaten
  • ¾ cup sugar
  • 1 can coconut milk
  • 1 cup rice flour
  • 1 cup water
  • vanilla or pandan juice

Method:

Place eggs in a bowl and beat lightly. Add sugar, mix well. Add rice flour and a little coconut milk, mixing until a paste forms.

Dilute paste with the rest of the coconut milk and water. Add flavoring to taste.
