Corn Stock

Ingredients:

  • Shaved corn cobs, broken into halves or thirds
  • 1 Yellow onion, thinly sliced
  • 1 Medium potato, sliced
  • 1 Celery rib, sliced
  • 5 Parsley sprigs
  • 5 Garlic cloves, crushed
  • 1 tsp. Salt
  • ½ tsp. Peppercorn
  • 9 Cups cold water

Method:

Combine all ingredients in a stockpot. Bring to a boil, reduce heat and simmer uncovered for 1 hour. Strain (Press liquid from vegetables).
