Pumpkin and Spice Bread Pudding

Ingredients:

  • 7 slices of stale bread (white or wheat), cut in 1 inch cubes
  • 4 eggs
  • 2 c. of half and half
  • ½ c. sugar
  • 1 tsp. vanilla
  • 1 tbsp. of apple pie spice
  • ½ can of pumpkin (15 oz. can)
  • whipped cream or ice cream
  • caramel

Method:

Blend all ingredients together except for bread. Pour mixture onto bread. Let soak for 15 mins. Bake at 350 F for 35 to 40 mins. until egg has formed custard.

Serve with whipped cream or ice cream, drizzle with caramel.
