(From Restaurant Website) A chef who has cooked for a U.S. president, a presidential candidate and a king – as well as both for and with assorted celebrity chefs, including Julia Child – has opened his own restaurant, Gideon’s, at 34Holden St.

At Gideon’s diners can look around on the restaurant walls and see notes of thanks from former President Bill Clinton and New York Sen. Hillary Rodham Clinton, from King Abdullah and Queen Rania of Jordan, and from Julia Child, the woman credited with raising the food-consciousness of Americans via television. It’s a star-studded group attesting to his culinary achievements, and Gideon acknowledged that he enjoyed the stratospheric company. But he said that opening his own restaurant is the realization of a long-held dream and that he is delighted to be in North Berkshire, where the people are neighborly, the scenery is beautiful, and the arts scene on the rise.

“When I drove into North Adams, I felt at home,” said Gideon, who grew up in Hannibal, Mo., Mark Twain’s hometown. “I want to be in an area where you know everybody, and this is it. I want to know people and build relationships,” he said. “I already have return customers.”

He has been cooking professionally since age 14, and cooked his first pot roast at age 8, but early on he considered his efforts secondary to his instrumental and vocal training – he has played trumpet onstage with Dizzie Gillespie. He said he was washing dishes in The Carriage House restaurant in Hannibal when one of the cooks didn’t show up, and he, who had only watched the food preparations, stepped in. He later moved to Princeton, N.J., intending to continue his musical studies at Westminster Choir College, but found his way instead to Scanticon, where he was introduced to what he calls “real cuisine.”

"I love the ambiance and I love to chat," Gideon said Wednesday. "I love what I do." But his extensive culinary background -- Gideon's resume includes five Four Seasons five-star, five-diamond hotel/restaurants including the Regents Beverly Wilshire in Beverly Hills, Calif. -- didn't stop Gideon from feeling a bit star-struck when he cooked for internationally-renowned cooking expert Julia Child.

Whether cooking a special meal for actor James Belushi in California, catering to world leaders such as Jordan's late King Hussein at the home of Teresa Heinz Kerry, or serving it up to Berkshire region patrons, the desire to turn out "perfect" meals is never diminished, said Gideon. "It's about cooking good food," Gideon said. "Everybody loves to eat."
