Shrimp Scampi

  • 6-8 Jumbo Shrimp
  • 1/3 cup white wine
  • 1/3 cup clam juice
  • Diced Garlic
  • Breadcrumbs
  • Italian Parsley
  • Butter chunks
  • Paprika


Clean shrimp by first peeling off outer skin leaving the tail. With a knife split shrimp in half leaving them attached at the tail. Trim off the end and cut out any remaining veins. Arrange shrimp in a row on a baking pan. Cover generously with 3-4 Tbls. of garlic. Add 1/3 cup of white wine. Add 1/3 cup of clam juice. Lightly coat shrimp with bread crumbs. Sprinkle with paprika and Italian Parsley. Add 5-6 cold butter chunks and bake in oven at 425-? for 7-10 minutes.
