Ingredients:

  • Strawberries
  • Raspberries
  • Blueberries
  • Blackberries
  • Oranges
  • Kiwi
  • Cassis (Blackcurrant) coulis (sauce)
  • Whipped heavy cream
  • Tuile cookie

Method:

A fruit plate can be prepared any way you like using whatever fruits you have on hand. Try to use seasonal fruits as much as possible, from local growers. Cut the tops off three large, similar sized strawberries. Stand the strawberries on their flat end and slice them very thin. Still standing the strawberries on their flat end place them on a plate and fan them out in a straight line so they form a triangle.

Fill the triangle with a selection of mixed berries, supreme oranges and slices kiwi. Pour a little sauce on the plate. Place some whipped cream on top of the fruit and a tuile cookie.
