Poppy Seed Cake

  • 1 cup flour
  • 1 cup sugar
  • 1 cup poppy seeds
  • 1 cup oil
  • 1 cup whole eggs
  • 2 tsp. Baking powder
  • 1 cup dried fruit
  • 1 tsp. Flavoring (rum, vanilla, etc.)

Soak poppy seeds in boiling hot water for about an hour. Drain through sieve. Mix whole eggs with sugar (with mixer) until foamy. Mix eggs, poppy seeds, flour, oil and baking powder.

Add dried fruit last, and then add flavoring and optional 1-2 tablespoons of alcohol (vodka or cognac). Bake for about 50 minutes at 350°.

Cake is ready when it starts to stand away from the sides of the pan.
