Potato Pancakes

  • 4 large potatoes
  • 1 small onion
  • 1 egg
  • 1 teaspoon salt (optional)
  • 6 Tbsp. flour
  • Lard or vegetable oil for frying

Peel the potatoes and grate them in a food processor or blender. Cut onion and grate with potatoes. Beat the egg and mix into potatoes and onion. Start heating fat in sauté pan. Add salt and flour to potato mix.

Scoop large tablespoon of potato mix, and drop carefully into the pan. Fry, turning over half-way, until golden brown in color.

Serve with sour cream and apple sauce. Serves 5.
