Vianda (Boiled Root Vegetables)

  • 7 medium yuccas
  • 4 Yautia
  • 4 Malanga
  • 4 Name (yam)
  • 6 Bananas
  • ¼ cup olive oil
  • ½ cup milk
  • Water to cover
  • Salt and pepper to taste


Remove the waxy exterior from the yuccas with a knife, then cut into quarters. In a medium pot, bring water (to cover) to a boil, and cook the yucca separately from the other vegetables for 30-40 minutes. Remove pan from heat and set aside.

Remove skins from the yautia, malanga and name. Rinse with water and cut into large pieces. To prepare the bananas, remove the tips and slice each bananas, lengthwise.

Add the vegetables to a large pot, saving the bananas for last. Cover with salted water and milk. Cook uncovered for 30 minutes, or until vegetables are tender when pierced with a fork.

Drain and remove. Sprinkle with olive oil, and season with additional salt and pepper, as needed.
Serve immediately. Serves 4-6.
