Warm Spiced Maple, Apple and Cranberry Compote

  • 4 unpeeled diced apple of native variety
  • ½ cup vermont grade a maple syrup
  • 1 tsp. cinnamon
  • few grates of nutmeg
  • 1 tbsp. whole butter
  • ¼ cup spiced rum
  • ¼ cup sundried cranberries
  • 4 large scoops premium ice cream (berkshire brand)
  • ½ cup fresh whipped & sweetened cream
  • 1 tbsp. white powdered sugar


In large saute pan melt butter, and add large diced apples. Drizzle in maple syrup, add cranberries, and flavor with spices. Cook until apples soften a little, 5-8 minutes. Remove from heat. Place large scoops of ice cream in chilled martini glasses, and top with warm compote. Garnish with fresh whipped cream, and cotton candy if you're at Luva.
