Savor Dakota follows bison from ranch to menu and visits with a Sioux Falls chef known for her vegetarian offerings. Mimi Hillenbrand at 777 Ranch; Bruce Anderson of Western Buffalo; Ben Klinkel, Rapid City Resterauteur; Sanaa Abourezk of Sioux Falls; MJ created a ground bison empanada with Sanaa.

Weather begins to cool and the crisp weather is a welcome break from the summer heat. MJ Adams visits with sheep producers Justin and Crissa Fruchte at Sturdy Post Ranch. near Elkton, SD Adams prepares braised lamb with the couple. Michael Johnson manages the Pheasant Restaurant in Brookings and prepares recipes with lamb from Sturdy Post and other area producers. Dakota Spirits in Pierre work to produce farm to bottle liquors.

Salad calls to mind lettuce and dressing at the start of a meal. There are more variations from arugula to cooked grains mixed with vegetables. Mary Trykoski of Rapid City grows fresh greens in her garden; MJ Adams demonstrates how easy it is to make your own dressing; Wagner Community School uses a greenhouse for class lessons; Aberdeen Chamber and Visitor's Bureau make pheasant salad sandwiches for visiting hunters. MJ Adams created an emmer grain salad with students from Wagner School.
